1. In a plastic bag combine the apple cider, bourbon, maple syrup, lemon zest and dash of cinnamon; close the bag and shake aggressively.
2. Pour the cider mixture into ice molds and then place in the freezer for at least 6-12 hours, or until the ice cubes solidify.
3. When you are ready to serve, place 1-2 ice cubes in rock glasses and pour the hard cider over top. Serve immediately.
