Brie-and-Plum Waffle Sandwiches

Here begins one of our favorite waffle sandwich designs. Prep the Pickled Plums first and then cover them in melty brie and peppery arugula. 

Keep waffles on hand for all sorts of sandwich play: sliced chicken breast, Havarti cheese, and chipotle mayo are the ultimate combination, but ham and Stilton with a vein of candied ginger or lemon are a winning combo as well...

Yield: 4-8 portions , Prep time: 10 minutes , Cook time: 10 minutes



1. Preheat the oven to 350 degrees.
2. Assemble the sandwiches: Slice the waffles in half widthwise. Place the pickled plums on the bottom, top with slices of fresh Brie, and finish with a handful of cleaned baby arugula and the waffle top.
3. Place the waffles on a cookie sheet and cook for 5-10 minutes, or until the cheese is melted and the waffles are warm.
4. Slice in half and serve hot.

Tips + Tricks

**In Cincinnati, we swear by Taste of Belgium waffles for these sandwiches; just one, carefully halved horizontally, is just right. If you can't get authentic Liège waffles, however, a pair of toaster waffles -- one for the top and one for the bottom -- will work just as well.
**Tailor this to your tastes by trading out the arugula for mesclun greens or baby spinach, and the Brie for Gorgonzola or bleu cheese.
**You can assemble the sandwiches in advance and keep in the refrigerator until you are ready to warm and serve.
