Chardonnay Vinaigrette

We designed this Chardonnay Vinaigrette as a way to showcase and complement one of our favorite Francis Ford Coppola wines when it was first introduced. “The White Doe”, as it is called, is a delicious accompaniment to supper and, as it turns out, brilliant inspiration for a simple, crisp dressing.

Toss this vinaigrette into Brussels Sprouts Salad with roasted pears and toasted pine nuts.  And, if you cannot find champagne vinegar, substitute with any wine-based vinegar, apple cider vinegar, or even rice vinegar for a similar effect.

  1. Combine the oil, vinegar, wine, and mustard in a resealable plastic bag; shake to mix thoroughly.
  2. Season with salt and pepper to taste. Taste the dressing and adjust according to your preference.
  3. Store in the refrigerator until you are ready to serve.

Tips + Tricks

**I like to taste the bite of vinegar. If you would like more acidity, however, you can always add more wine to the recipe.
