Coconut-Walnut Granola

The most important things to keep in this recipe are the oats, honey, and oil. Otherwise, doctor it up to your liking! Use whatever nuts you have on hand, play with the spices you use, and try a variety of dried fruit.

Then, spread it as the finishing crunch on top a Carrot-Orange Yogurt Bowl.

Yield: 4 cups , Prep time: 10 minutes , Cook time: 20 minutes

1. Preheat the oven to 350 degrees.
2. In a bowl mixing bowl, whisk together the honey, oil, Chinese Five Spice, and salt.
3. To the same bowl, add the oats, toasted walnuts, golden raisins, and coconut. Toss with the wet ingredients until everything is coated and then spread onto a parchment-lined cookie sheet.
4. Place the cookie sheet in the oven for 16-20 minutes tossing halfway through. When everything is golden brown, remove from the oven and let cool to room temperature. Transfer to an airtight container and store up to a month.
