A simple syrup is nothing but equal parts water and sugar. Use this recipe as a template to play with your favorite fresh ingredients to make all sorts of clever cocktails. Fresh ginger, fresh rosemary, and any citrus zest are wonderful additions too.
Yield: 8-12 cocktails , Prep time: 5 minutes , Cook time: 15 minutes
1. Bring everything but the champagne to a boil until the sugar dissolves and the berries burst, about 5 minutes. Strain through a fine mesh sieve and set aside.
2. Prepare the cocktail to order: Pour some syrup into the bottom of a champagne flute and top with champagne. Garnish with leaves of thyme and whole fresh cranberries.
