Mint Tea Floats

Here for you is one of our favorite takes on tea, one that just tastes like summer, and has quite a calming effect as we frantically gear up for the return to school. I like it best in the afternoons, but it makes a delicious little dessert too.

Tap into the flavors we've suggested here – lemon, mint, and strawberry -- or, choose a complimentary combination of flavors that sounds good to you. Consider layering orange sorbet, black tea, and curls of fresh zest, or a stone fruit sorbet, chai tea, and a spoonful of sliced ripe peaches.

Yield: 4-8 floats , Prep time: 10 minutes , Cook time: (steep time) 5 minutes

1. Steep your tea. Let it come to room temperature or cool in the refrigerator, depending on what temperature you prefer when the float is served.
2. Clean, stem, and quarter the strawberries.
3. Assemble the floats: Scoop the sorbet into glasses. Pour the tea over each scoop, and garnish with strawberries. Add a spoon and serve right away.
