Mulled Wine Sundae

Deck the halls of your home with the fa-la-la-la fragrance that spills from this warm and wonderful recipe. Make mulled wine the perfume that stamps all your holiday memories. Serve the spiced treat as a toasty cup of cheer. Or, pour it over ice cream as we've done for a wintry spin on a classic sundae; top with crispy pecans for crunch and a crowning kiss of saltiness. 1. In a large sauce pot combine the cinnamon sticks, nutmeg, cloves, allspice, and cardamom. Bring to high heat to toast the spices.
2. Once you can smell the spices, pour the wine into the pot and add the quartered orange and split vanilla bean. Turn to medium-high heat and let cook for 30 minutes.
3. As all the flavors steep in the wine, cut the apples from their cores and chop to a smaller dice.
4. After 30 minutes, strain the spices from the wine and add the apples; turn to low heat.
5. Scoop ice cream into bowls and ladle the warm wine over each. Garnish with toasted pecans and serve immediately.
