Parmesan Tuilles

The basic instruction here is: BURN THE CHEESE. Make it bubble like it's melting out the sides of a gooey grilled cheese. It's the best part of the sandwich anyway...

Here we turn that crispy brilliance into a handy vehicle for a simple salad. Enjoy.

Yield: 18 tuilles , Prep time: 1 minute , Cook time: 5 minutes

  • nonstick skillet
  • nonstick mini muffin tin



1. Into your nonstick skillet, pinch two 2-inch flat rounds of shredded cheese; bring to medium-high heat. Season each mound of cheese with a pinch of pepper.
2. Allow the cheese to melt until it bubbles. Within 1 minute, as each tuille starts to form a golden brown crust, remove from the sauté pan, press into the individual mini muffin molds and let rest.
3. Allow the tuilles to cool completely, approximately 10-15 minutes, before removing them from the the muffin tin.
4. Assemble the salads just before serving them: fill the mini cups with thinly sliced lettuce and drizzle with Caesar dressing.
