Enjoy the perfectly messy -- and beautifully bite-sized -- s'mores sandwich just the way it is, or play with texture by substituting chunky peanut butter for creamy, or adding salted peanuts or white chocolate chips.
In a stand mixer combine the peanut butter, sugar, egg, and pumpkin pie spice. Mix to a uniform consistency.
Line a cookie sheet with parchment paper. Roll the cookie dough into walnut sized balls and press the centers down with your thumb.
Place in the oven and bake for 6-8 minutes or until the edges are golden brown. Remove from the oven and let cool.
When you are ready to serve, place half of the cookies back on a cookie sheet and flip upside down. Place a marshmallow on the cookies and place under the broiler until the marshmallows are golden brown. Top with a second cookie, gently sandwich together and then serve warm.

**Pumpkin pie spice and apple pie spice are usually about the same, but if you don't have either of those you can substitute a dash each of cinnamon, ground ginger, and nutmeg.
