Pine Nut Brittle

Use this very simple recipe to transform magically everyday sweet and savory meals and snacks. Layer it into a parfait for breakfast, crunch it onto a baked sweet potato with a dollop of yogurt for lunch, and sprinkle it over roasted pears for dessert.

Yield: 1 cup brittle , Prep time: 10 minutes , Cook time: 20-30 minutes



  1. Bring a small sauté pan to medium-high heat and add the pine nuts to toast.
  2. As the nuts start to turn golden brown, add the brown sugar, honey and salt. Cook together until the brown sugar dissolves and the nuts are completely coated.
  3. Pour the pine nuts onto a piece of parchment paper and let cool for 15 minutes. Break apart by hand.
