Quick Pickled Asparagus

Pickle a bunch of asparagus as soon as it starts to pop out of the ground in spring. Use it to garnish cocktails throughout the weekend, and alongside sandwiches throughout the week. Or, put pickled asparagus to work as the crowning finisher to a platter of Tallegio Grilled Cheeses for happy hour. 

Yield: 2 cups , Prep time: 5 minutes , Cook time: 5 minutes



1. In a sauté pan combine the water, vinegar, sugar, salt, crushed garlic, thyme, and fresh cracked pepper. Turn to high heat and cook until the sugar and salt dissolve.
2. As the liquid boils, prep the asparagus: Cut the woody bottom third off each spear and discard. Cut the remaining asparagus in half and place in a bowl.
3. Once the liquid is ready, pour it over the asparagus and let sit until the liquid has cooled completely. Use right away.
