Radish Crostini with Butter Vinaigrette

Butter vinaigrette is one of our favorite dressings. In this appetizer recipe it is the creamy secret that beautifully marries tangy goat cheese and sharply fresh radish. Make it the finishing touch to roasted vegetables, the perfect simple sauce for steak, or an easy dressing for tossed green salads.

Yield: about 25 pieces , Prep time: 20 minutes , Cook time: 2 minutes



1. Prep the vinaigrette: melt the butter in a microwavable bowl, and then whisk together with the vinegar and salt; taste and add more vinegar and/or salt to your preference.
2. To assemble the crostini, spread some goat cheese onto each slice of toasted baguette and shingle with a few coins of radish. Plate the crostini on their serving piece and then spoon the vinaigrette over the top of all of them. Finish with a sprinkling of chopped chives and serve immediately.

Tips + Tricks

**Do not make the vinaigrette until you are ready to serve the crostini. If you make the butter vinaigrette too far in advance, the butter will solidify.
