Simple Couscous

Take this basic recipe for delicious comfort food and make it your own. Swap in pomegranate arils for the plums we've suggested, or add roasted acorn squash and chopped fresh rosemary instead of the basil. 

Layer over a hearty smear of baba ganoush, as we've done in the picture, for added texture and flavor. And make it into a meal with grilled chicken breasts right on top.

Yield: 2-4 servings , Prep time: 10 minutes , Cook time: 10 minutes



1. In a medium sauce pot, bring the vegetable stock, olive oil, salt, cinnamon, and chili powder to a boil. 
2. Stir in the couscous, cover with a lid and remove from the heat. Let sit 5 minutes. 
3. While you are waiting, dice the plums, and tear the fresh basil. 
4. After the 5 minutes, fluff the couscous with a fork and mix in the plums and basil. To serve, smear your favorite baba ganoush on the bottom of a plate and top with a hearty spoonful of the couscous. 

Tips + Tricks

**Baba ganoush is a creamy and garlicky eggplant puree that you can find in the grocery store near all the prepared hummus. Consider smearing hummus or white-bean puree underneath the couscous too.
