Spinach Pesto

1. Blend together the spinach, garlic, parsley, Parmesan, tarragon, and basil in the bowl of a food processor. Pour in the oil through the spout of the processor as you continue to blend. *You may use more or less than 1 cup of olive oil; pour slowly and stop when the pesto reaches your desired consistency.
2. Season with salt and pepper. Use right away or refrigerate until service.
